Here, inmates are trained and employed as professional pastry chefs, gaining new skills and rebuilding their lives through the art of baking. Each panettone is handcrafted with passion, using carefully selected ingredients and a slow, natural leavening process that takes over 72 hours. Our strenghts
Our mission is to bring the italian tradition of one of the most typical dessert of Italy with its own original recipe but that is low in sugar, well balanced in protein, carbs and fats and that will guarantee a sweet pleasure with no guilt.

We use the bare minimum amount of sugar, because we believe that is not healthy and hide the real flavour of a pastry.

We balanced our ingredients in order to get the perfect recipe allowing people to have a sweet treat with not guilt

We believe in handmade process and we always made our tarts fresh. There is no industrial or freezing process.
